Fridge is freezing the water filter jug?

It’s an LEC L555WS, was given it by a friend of a friend who was moving. The slot at the top/back inside is blowing cold air so I assume the fan is ok, and it always seems to be “on” ie it never goes quiet. I’ve tried it at the lowest setting but no difference, and turned it off for 24hrs and restarted it. Strangely milk and orange juice, plus ketchup etc are not freezing(but seriously teeth numbingly cold)
Any suggestions- I think it could be the thermostat, a new one is £16, any tips on fitting it, quite ok at DIY and mechanics…(so he thinks…!)
