MURPHY BED – I am looking for DIY plans without the $300 hardware.?

I need something simple made from pine and plywood

You might try a version of what I did in my last house. I had a box spring and a foam mattress but no bedframe. I put big hinges on the box spring to fasten it to the wall so it could be lifted up to get at underbed storage and for cleaning, and screw-on legs at the foot end. It wouldn’t lie flat against the wall, but I didn’t need it to. If the platform is somewhat longer than the mattress, it would, and I’ll let you think of what would be best to hold it up against the wall–straps and hooks of some kind would work.
