New installation DIY wood countertop question?

We’re getting to the stage in our DIY house build where we’re making finish decisions. We’ve decided to go with a wood counter top in our cottage style kitchen. We initially decided on applying a marine grade poly to seal the surface of the counter top. Now I’m wondering if we should go with an oiled finish (linseed oil). I don’t plan on using the tops for cutting, but we will be using them for food prep (rolling out cookie dough, being one direct contact thing we’ll definitely do). What would be the best finish??? I really love the primitive look of peeling paint and such, so a perfect, shiny finish is not a “must have” for me.

We did the wood counter top thing in our kitchen as it is an old farmhouse and overall, I love them! My husband refinishes a lot of furniture and he used Tung oil as the finish. One of the benefits of Tung oil is that when you get a “mark” in it and need to repair it, you just feather the finish in and it blends very well.

Tung oil is available in either a satin or a gloss finish. We went with the satin which gives you that well cared for wood look rather than the shiny, plastic look of so many finishes.

But then I don’t roll pastry or cookies directly on the wood either. I have a pastry board I use for that because it doesn’t stick to the board (special material) and I don’t have to use nearly so much flour.
